Cinnamon Crumb Coffee Cake – Panera Coffee cake

Coffee cake is a dense and buttery rich, old-fashioned cake with spice and sugar crumbs in the center and a top surface, usually served with coffee or tea. Sometimes, the coffee cake is glazed and filled with nuts as well.  The Coffee cake recipe is a Similar old-fashioned  butter pound cake to that Sour cream is introduced to make the cake moist.

Cinnamon coffee cake is my to go whenever I order food at Panera. I had first tried this cake at Panera in 2016. Usually, I get a Mexican avocado melt sandwich for a meal and a slice of cinnamon crumb cake. But, It seems Panera has changed the menu and, now they sell only whole cakes. Not sure only at my local Panera or in all locations. Besides, I cannot go through the whole tub of sour cream that I buy for Mexican tacos and burritos. Sour cream has very little shelf life and, once a tub is opened, it goes bad very soon even, in the refrigerator.

So with the leftover sour cream, I have started to bake the cinnamon coffee cake at home. This cinnamon coffee cake with sour cream freezes very well. I like to Slice the whole cake and freeze it so that Whenever I need a piece, I can de freeze a slice of cake and enjoy it with hot coffee. Based on the ingredients on the Panera website and some other online references, I created this cinnamon coffee cake recipe. I recommend making this cake during the warm weather day because the recipes involve a lot of solid fat.

Ingredients:

Cinnamon Crumb:

Note:

I like to add a thin layer of cinnamon crumbs to cover the top surface of the cake and, most of the crumbs go into the middle layer. Because, When freezing the cake, the crumbs on the outer layer will fall apart. If you prefer thick crumbs, feel free to double the recipe.

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/8 tsp of salt
  • 42 grams of cold butter (If it is difficult to work with cold butter, use soft better instead.)
  • 1.5 tsp cinnamon powder
  • 1/2 cup chopped toasted walnuts(optional)

Sour Cream Cake: 

  • 170 grams butter(1.5 sticks) 
  • 300 grams of all-purpose flour, 2.5 cups (bleached) or cake flour
  • 300 grams White of sugar, 1.5 cups
  • 1/4 tsp of sea salt
  • 3 – large eggs, 144 grams
  • 2 tsp vanilla essence
  • 1 /2 tsp baking soda
  • 2 tsp baking powder
  • 1.25 cups Sour Cream

Procedure:

Step 1: Cinnamon crumb:

  1. In a bowl, combine the flour and the cold butter until the flour look like small crumbs.
  2. Add in sugar, salt, and cinnamon powder and mix well. Store it in the refrigerator until use.

Step 2: Cake

  1. Preheat the oven to 350 Fahrenheit. 
  2. Grease a 10-inch ring cake tin and dust it with flour.
  3. Combine the salt, baking powder, baking soda with the flour. Sift the flour and keep the cake flour aside, ready to use.
  4. Combine the soft butter with sugar using a whisk or blender until creamy and sugar dissolved.
  5. Add in vanilla and one egg at a time and blend until fluffy and pale in color.
  6. If you’re using oil and butter, add in the oil and keep blending until the batter becomes pale.
  7. Combine the sour cream with the batter and beat until well mixed.
  8. Sift the prepared cake flour over the batter in three batches and mix well without any lumps. Make sure not to overmix the flour. 
  9. Once the dry ingredients are introduced to wet ingredients, work swiftly because baking soda will react. 
  10. Swiftly add half of the cake batter to the mold and spread evenly with a spatula. Cover the surface with the cinnamon crumb and toasted walnuts. 
  11. Add the rest of the batter on top of the the cinnamon crumb and walnuts. Smooth out the cake surface and add the leftover cinnamon crumb.
  12. If you’re going to freeze the cake, Spread a thin layer of Cinnamon crumb on the top surface.
  13. Place the cake tin in the preheated oven for 90 minutes to 105 minutes or until the toothpick inserted in the center comes out clean.
  14. The baking time depends on the oven temperature, cake mold’s shape, and size. So While the cake is baking, keep an eye.
