Tapioca Pudding

Tapioca pudding is an easy and simple dessert recipe. Pudding needs only basic ingredients that we always have at home. So whenever you get a sweet craving, gather all the ingredients and make a pudding. So simple isn’t.

Tapioca pudding/pudding is crowd-pleasing dessert. If you’re hosting a party at home, a day before the event, prepare tapioca pudding for dessert and store it in the fridge. Tapioca pudding can be served warm or cold. For warm pudding reheat or microwave for 15 to 30 seconds.

Tapioca is a pearl made of tapioca starch. It looks similar to sago/Javaris but, tapioca pearl is different. For Indian people If you cannot find tapioca pearls in your area then use sago/Javarisi. Others, you will get the tapioca pearls in all the supermarket at the baking aisle.

Procedure for Tapioca pudding is similar to Indian Payasam only difference is the smooth and silky texture that comes from the egg yolks. Payasam might become like a cake after a few hours whereas the pudding made with egg yolk stays smooth and silky. Essence is the must for pudding with egg yolks because egg yolks have a dominating unpleasant smell.

If you’re a vegetarian or afraid of the egg smell replace the yolk with 2 tbsp of corn flour. However, for non vegetarians, I recommend trying once with yolk.

I Used this Tapioca pearls(Reese)

If you’re not able to buy reese then, try these Tapioca perals

Ingredients:

  • 1/2 cup of small Tapioca pearls
  • 3 cup of whole milk
  • 3 tbsp of brown sugar
  • 1 to 2 tsp of vanilla essence or any essence of your choice
  • 3 large egg yolks
  • 3 tbsp of white sugar

Procedure for tapioca pudding:

Step 1:

Soak the tapioca pearls in water for 2 hours.

Step 2 :

1. Drain the tapioca pearls and keep it aside.
2. Pour the milk in a medium-size saucepan and add the drained tapioca pearls to the milk.
3. Turn On the Stove and Let the tapioca pearls cook on low heat until the tapioca pearls become translucent and tender .
4. Meanwhile, In a small cup whisk the egg yolks and keep it ready.
5. Once the tapioca pearls are well cooked, take a half cup of simmering milk from the saucepan.

Step 3: Tempering the egg yolk:

6. Gradually pour the milk to the egg yolk and simultaneously whisk the yolk continuously. Keep tempered yolk aside.

7. Add the sugar and vanilla essence to the saucepan and mix well for a second.
8. Place the tempered yolk back to the saucepan and keep stirring for 20 minutes or until the milk thickens.

Serve the tapioca pudding warm or cold!
